Would you, for example, buy two copies of the Monopoly board game (no, I didn't choose that as a silly joke) because two people want to play the game? It would be stupid to do so, wouldn't it? So why should a consumer have to spend upwards of $800 - $1,000 for two copies of an operating system in order to have his or her laptop installed with the same OS as the desktop?

Irrelevant analogy. Do you have to buy another license of Windows to have you and your friend surf the web together? Obviously not.

Do I have to pay the $99.99 I paid for a DVD box set every time I wish to watch the discs?

This is another irrelevant analogy. Do you have to pay Microsoft money every time you boot up your computer in Windows?

Am I limited to just watching them on one DVD player?

This is a relevant analogy. You are not limited to watching them on one computer. However, you are not permitted to take the DVDs and watch them on two DVD players at the same time, just as you are permitted to move your Windows installation from your older PC to a new one.

Once I've bought the product, it's mine to do with as I please barring any acts of copyright infringement.

But using the software on more than one copy of a computer institutes copyright infringement, because the license provided to you by Microsoft says that you are permitted to use this software on one computer only.

I can also lend the DVD to a friend or relative, which might convince them not to buy them for themselves, but that's not an infringement of copyright since the discs haven't been copied nor has there been any money changing hands.

I can also lend my Windows XP disc to a friend, provided that they don't install them on a computer if they haven't bought their own license.

Playing a DVD and using Windows XP (note, using - not installing) are not comparable. Playing a DVD is considered a "broadcasting right". This right isn't applicable for software. Reproducing the DVD is a mechanical reproduction right, which is applicable for both cases.
