"Heart Softening BGM", all four versions are totally awesome. I also like "Those Who Work Must Eat". I honestly believe Suikoden II has the best BGM.

Because Suikoden III was the first one I played, it's music will always have a special place in my heart.

These are my top 3, but the whole soundtrack is excellent.
Mysterious People
Seaching for a Hero
Complicated Thoughts

Suikoden V has great music, but I need to listen to it more before I pick any specific pieces. I also really like "Gothic Neclord" from Suikoden II.

I somehow only fancy the opening theme song of the game. Maybe it's because of the video and clips of the characters and game provided that makes it more interesting to play and such :)

I would have to say the Black Forest Theme from Suikoden 1, mainly bacause I'm a HUGE fan of classical music, especially Suikoden 1's OSTs. The Touching Theme and Gorgeous Scarleticia themes are some others that I like.

I really like the opening theme of Suikoden 1 and my fave version is the one plays in Tir's hometown (Gregminster),the acoustic one...
And Door of hope from Tierkreis and the one plays in the team preparation scene (dunno the title)...

The music in suikoden is one of my favourite aspects of the game, particularly the themes with an eastern vibe like yashuna village or eternal flow. It easily bests the music to any other rpg series ive played and adds so much to the feel of the game. I think its a big part of creating that 'suikoden feel.' most of my favourites come from the first two suikodens. Had to stop myself from listing almost every theme from s2. The themes that grabbed me by the sperm nuggets from those two were:

-forgotten daze
-distant hills
-moment of peace
-eternal flow
-rock rockland
-black forest
-luca blight battle
-heart softening BGM
-s2 opening theme
-in tranquility (amid the silence)
-hidden hamlet of the ninja
-reminiscence
-city of memories
-wind and ground (have now played SIII, this was my favourite)

Many others like distant sky or oh beautiful dancer were class too. Thought the music in s5 was excellent.Did the business for me. Dont have a save that i can use to access cornelio for all the songs so il just say yashuna villge was probly my favourite. Or ' power like the sun.' Of all the games s2 had my favourite BGM. Pure class all the way.
