LEBANESE CHICKEN WITH RICE

Serves:five people.

Ingredients:
1 package of chicken (only breast and legs)
1/2 pound ground beef
2 cups of rice (any kind you have)
2 tablespoons margarine
1/2 stick unsalted butter
4 cups of chicken broth
1/2 teaspoon of ground cinnamon
1/2 teaspoon of black pepper
1/4 cup of sliced almonds
1/4 of pine seeds
1/2 cinnamon stick
3 whole peppercorns
1/2 sliced onion
A bit of salt for the taste

Method:

Chicken:
First, place the chicken in a large pot and cover it with water, then add the cinnamon stick, sliced onion, all the peppercorns, and a little bit of salt (do taste it to see if it is enough). Boil it slowly until it tenders for (1 to 1 1/2 hours), afterward let it cool a little then bone and skin the chicken. (Do not throw the chicken broth just reserve it for the rice).

Rice:
Brown the ground beef in a large pan then add rice, ground cinnamon, pepper and the chicken broth (salt as desired). Next, cover the pan and reduce the heat, simmer for about 20 minutes or until the rice is tender and nearly all the liquid is absorbed.

Meanwhile, fry the almonds and the pine seeds in the stick of unsalted butter until it nicely browns. Arrange the rice on a platter, put the chicken on top of it, and lastly sprinkle top of the chicken with almonds and pine seeds.

I love to try recipies and do real cooked meals when I'm bored and have time/money. But as I've experienced, time and money are two things many people don't have.
I lived on-campus last year, in an appartment with friends, and quickly learned that cooking requires far more ingredients than most college folk have on hand, and more time/skill than many young people believe they have. So, I'm going to write quick/easy (nealy pathetic, but more edible than junk) recipies here first. Call them 'empty fridge' meal ideas.
... and they should be easy enough that if you've never cooked for yourself before, you'll still be fine. So relax, and give it a try!
If you know how to cook, then you don't need these recipies. You've probably made these before, many times.

For breakfast: French toast.
Why it's easy: You can make it with any bread-item you have, be it normal sliced bread, bagels (though you have to slice these thinner), cinnamon rolls or sweet breads, even dinner-rolls if you're desperate. It's fast to cook, and really hard to mess-up.

Ingredients:
1) As many slices of whatever bread you think you want for breakfast. (normally, maybe 3 slices of regular plain old bread for a serving?)
2) eggs- 1 or 2 per serving- it varies with choice of bread. don't worry, you can add more if you run out.
3) milk. just a little. less than you'd need for your cereal.
4) optional vanilla extract and/or cinnamon/cinnamon sugar.

tools: a bowl, big enough to mix eggs in without spilling them, and to put a slice of bread in without smooshing it too much.
a fork (or wire whisk if you have it!)
a griddle
spatula

a) Mix eggs, approcimately 1 egg for every 2 slices of bread you want, with a splash of milk -maybe a tablespoon per egg?- and a TINY amount of vanilla and/or cinnamon if desired.
b) Slice bread of choice. The thicker the slice, the longer it will have to cook, so if you're doing this quickly, go for normal 'sliced bread' thickness. (1cm)
c) Soak bread in egg mixture. For about 10 seconds per side, or until it seems nicely coated/soaked.
d) place egg-soaked bread on griddle over med-low heat. Let it cook there until lightly browned, then flip with spatula and cook other side.
e) eat.


For lunch or dinner, since someone suggested instant Ramen, I'm going to say that doctored ramen isn't bad when you're in college and short on cash.
Ideas for doctoring instant ramen so you actually have a meal:
Once ramen has reached boiling point and the noodles are cooked, break an egg into the broth and stir immediately. (Make sure the yolk breaks before it cooks!) You'll get an egg-drop-soup base in the ramen. Added protien!
Try steaming (or microwaving if you're super-lazy) some veggies, frozen or fresh, and spooning a lump of those into the bowl with the ramen. The broth flavors the veggies, and the veggies provide substance in the soup.
If you have leftover meat or other similar stuff (like turkey from thanksgiving, or beef cuts your parents sent home with you to your appartment, or tofu left in your fridge that you don't know what to do with, even bacon strips work sometimes) heat up some of that and chuck it into the soup. Right on top of the noodles.

Good job. Now your instant ramen has more than noodles in it. It's almost a reasonable meal. and it probably cost you about 75 cents. ^_^
(other easy dinners: spaghetti or stir-fry. Both of those tend to be slightly more expensive, though still fairly cheap.)



And my favorite, Desert!
The easiest desert I started making in bulk while I was living in an appartment was rice krispie bars. But... there's only so much cereal anyone should eat. :P and goodness, if you don't know how to make those, it's on the box. go look.
No, what I'll suggest is peanut butter cookies! They're fast, easy, and require very few ingredients.

What you need:
1) 1/2 cup margerine (butter turns out dryer, I highly suggest margerine or shortening... but shortening is something non-cooks probably won't have so MARGERINE!
2) 1 and 1/4 cup sugar (white sugar is fine, brown sugar is better)
3) 3/4 cup peanut butter - any kind
4) an egg
5) 2 cups of flour
*) optional vanilla extract - a couple of teaspoons to a tablespoon. not much.
*) optional hersheys kisses (go on down to the gas station and grab a bag to make the cookies chocolaty too!)

Equipment/materials:
Cookie sheet
mixing bowl
big spoon

Directions:
a) soften margerine for a few hours before you begin!
b) preheat oven to 350 degrees f
c) mix peanut butter, flour, margerine (soft), egg, sugar, and optional vanilla extract in your bowl until it's a creamy dough.
d) place small, even lumps of dough onto a cookie sheet. You don't need to grease the cookie sheet, because the cookies are super-duper fatty as they are (happy thoughts), and they always came off the tray well enough for me. You can put the fork-marks on the cookies if you wish, and I think they cook better when they are pressed a bit flatter. But if you would rather not, that's fine too.
e) cook for about 10 minutes or so, then let them cool. Once they're warm and no longer hot, remove them from the cookie sheet and enjoy!

If you want chocolate kisses on the cookies, refrigerate the hersheys kisses while the margerine is softening, and unwrap them while the cookies are baking. do not press forkmarks into the cookies before baking. When the cookies are just cooked, pull out the cookie sheet, and press one chocolate kiss into the center of each small cookie. Let the cookies cool and then remove them from the cookie sheet!

So those are my fast cooking ideas. I may post a real recipie later, but I thought I'd at least offer these ideas for the culinary-impaired and the starving college student masses. Now no one has an excuse to go to MacDonald's for their next meal.

Killer Burritos

1 lb. sliced carne asada
1 lb. ground beef
32 oz. refried beans
1 lb. shredded cheddar cheese
2 packets taco seasoning
margarine
Tortillas

optional ingredieants
lettuce (shredded)
tomato (diced)
olive (chopped)
sour cream
salsa
guacomole

Brown ground beef in a frying pan, draining off excess grease in a strainer. Once beef is drained add 1 packet taco seasoning for flavor

With carne asada cut into small bite size pieces than cook in a seperate pan with 2-3 tablespoons of margarine. Once meat is cooked drain off excess juice than add other packet of seasoning to meat and stir together over low heat.

Cook refried beans in a pan adding small amounts of water until you get the consistancy you like best.

Prepare all of the other vegetables and condiments depending on how much of each ingredient you want.

Build burritos to your specific liking.

Thank you ChiByakko and everyone for your delicious recipes. (Mmm... my mouth is drooling) :mrgreen:

Now these recipes are for the people who love cakes and would do anything to put their hands on it.


CHOCOLATE CAKE

Ingredients:
1 1/2 cup of flour
1/2 cup of sugar
23 teaspoon of sugar substitute
3 tablespoon of cocoa
1/2 teaspoon of salt
1 1/4 teaspoon of baking soda
1 cup of water
1 tablespoon of white vinegar
2 teaspoon of vanilla

Method:
Combine flour, sugar, sugar substitute, cocoa, salt, and
baking soda together in a 9-inch cake pan and stir well. Then Pour in
water, vinegar and vanilla and stir with a spoon until the mixture is
well blended. Afterward bake it in a 350 degrees oven for 25 minutes.

Topping: (Not necessarily, you can even use chocolate sauce)

Ingredients:
1 envelope of lo-cal whipped
1 package of topping mix
1 tablespoon of sugar
1/2 cup of skim milk

Method:
Combine all the ingredients for the Topping (lo-cal whipped + topping mix + sugar + skim milk) and beat it until the mixture is consistency of whipped cream. After that spread it on top of the chocolate cake and enjoy.



VANILA CAKE

Ingredients:
1 package of cake mix
1 teaspoon of sugar
1 cup of flour
1 stick of butter
1 teaspoon of vanilla
Some water

Directions:
First, put the cup of flour with the stick of butter and the cake mix in a mixing bowl and stir it well. Next, get another bowl, pour in it the vanilla with the two cups of water and the teaspoon of sugar, and stir it up. Afterward pour the first and second bowl in another big bowl and stir the combination very well. Put it in the oven at 400
degrees for one hour. When you take it out, set it to cool then serve it and add anything on it to make it more delicious.



STRAWBERRY CAKE

Ingredients:
1 box of white cake mix
1/2 cup of salad oil
4 eggs
1 box of strawberry jelly
1 pint of strawberries

Method:
Mix all of the white cake mix, the strawberry jelly, the strawberries, and the salad oil. Then stir well. Afterward add the eggs solely (one after the other) to the mixture and beat it twice. Then pour it into a cake pan (if not one then two) and bake at 350 degrees oven for 45 minutes to an hour.

Icing:

Ingredients:
1 box of powdered sugar
1 stick of melted margarine
1 pint of drained strawberries
Cool Whip

Method:
Mix together the powdered sugar, margarine and strawberries
and it pour over warm strawberry cake, and lastly top it with Cool Whip to
serve.

This one recipe is specially written for nanami-san since he likes pizza so much, so enjoy making and eating it. :)

PIZZA

Dough:
Ingredients:
1 package of yeast
1 cup of warm water
1 1/2 cup of flour
1 tablespoon of oil
1 teaspoon of salt
2 cup of flour

Method:
Mix the yeast and the cup of the warm water together, and then beat in the 1 1/2 cup of flours, oil and salt. Afterward stir in it the 2 cups of flour and knead for 12 minutes. After that, place it in a greased bowl (turning to grease both sides) and at last let it rise until it double. (Use 1/2 dough for each pizza)

Sauce:
Ingredients:
1 can tomato sauce (16 ounce)
2 tablespoon of oregano
2 tablespoon of Italian seasoning (or any seasoning you prefer)
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder

Method:
Cook the ingredients (tomato sauce, oregano, Italian seasoning, garlic powder and onion powder) for the sauce for 1/2 hour over low heat. Then roll out the dough to size of a pizza pan and cover it copiously with the pizza sauce.

Filling:
Ingredients:
Italian sausage (or any kind of sausage you have)
pepperoni
green peppers
onion
mushrooms
pizza cheese

Method:
Add the Italian sausage, pepperoni, green peppers, onion and mushrooms or any kind of topping of your choice, then cover it with shredded pizza cheese. In the end, bake it in hot oven at 450 degrees to 475 degrees for 15 to 20 minutes.

Kapsa ( chicken and Rice )


Ingredients list:

1 1/2 cups White Basmati Rice-cleaned & rinsed (Do not use other kinds of rice for this recipe)
Water (amount varies according to the size of boiler-pot you are using)
1 Tomato cut up in small pieces
1 small to medium onion chopped
2 heaping teaspoons of Baharat spice ground
3 heaping teaspoons of cardomon ground
3/4 can of tomato paste
6 teaspoons of olive oil
1 small snack box of raisins
1 small chicken cut in sections (a frying chicken will do)
salt to taste
1 cinnamon stick
2 packets (.19 oz each) of "Wyler's instant beef broth (optional)
1 dried black lemon
2 heaping teaspoons powdered garlic

Directions:

1. Thaw chicken according to meat packing directions, wash chicken thoroughly and take the
skin off the chicken. Set aside skinned chicken, but nolonger than a few minutes so as not to
promote bacterial growth.
2. In a large boiler-pot add oil, chopped onions and 1 heaping teaspoon of cardomon stirring
until browned on medium high heat.
3. Add boiling water to the boiler-pot until half full.
4. Add salt accoriding to your own taste, 2 heaping tablespoons of cardomon, 2 heaping
teaspoons of garlic powder, the cut tomato, 3/4 can of tomato paste, 1 black lemon and
the raisins to the already browned onions. (adding the 2 packets of "Wyler's instant beef broth
at this time is optional).
5. Stir on medium heat and try a little of the broth (add spices to suit your own taste).
6. Add chicken to the broth and keep at medium heat. Cover with aluminum foil and then the
pot lid.
7. Boil chicken on medium high for approximately 30 minutes. Turn down heat to medium
temperature and take the chicken out of the broth and place in an oven baking dish into
a preheated oven at 300 degrees F. & bake.
8. Strain the broth. Keep the strained ingredients in one bowl and the broth in another bowl.
9. Put the ingredients (e.g. onions, tomato, black lemon, etc.) back into the boiler-pot.
10. Add the 1 1/2 cups of Basmati rice along with 3 measured cups of the kapsa broth that
you had previously set aside in a bowl.
11. Bring the Basmati rice, the Kapsa broth and all the ingredients to a boil, then immedietly
turn down heat to low and cover sealing tightly again with aluminum foil. Cover with a lid over
the aluminum foil. Do not open or peek at it for atleast 10 minutes. Then periodically check to
see if rice is light and fluffy, but do not stir rice.

The Kapsa rice is done when all the broth has been absorbed. Remember to check on the
chicken in the oven every so often to make sure that it doesn't overcook and become dry.
The chicken should be moist.

Turn off the heat and take off the aluminum foil and allow the extra steam to escape. If the
Basmati rice appears dry and not completely cooked add a little bit of the extra broth and
recover until finished. Do not mix the water and rice, just add over the top.

Serving Directions :D :D

Pour rice on to a large circular platter. Place the chicken from the oven in the middle and on
top of the rice. Serve with shattah (hot sauce).
